Jing - sreencasting software that allows you to create short videos for your classroom. It has easy controls and can continue to run in the background of you computer for instant access anytime.
Screencast-O-Matic - My favorite screencast software. You can record videos up to 15 minutes long and it has some cool features like using the webcam to put your picture in the corner of your video. The downside is that you can only record one video at a time and have to store it somewhere (youtube) before you can record another one.

You can add multiple choice questions, short answer questions, or a discussion board that students can use after they watch the video.
TubeChop - Have you ever found a YouTube video that was 10 minutes long but you just wanted to show 2 minutes of it? TubeChop allows you to take a YouTube video and edit out all of the content you don't want so what you show in class is only what you want to show.
